BOWS

Honey Lime Enchiladas
Okay so here is the original recipe
Marinade
6 T honey
5 T lime juice (i large lime)
1 T chili powder
1/2 t garlic powder
1 lb chicken cooked and shredded
8-10 tortillas
1 lb cheese
16 oz green enchi sauce
1 C heavy cream
whisk marinade and chicken in a ziplock bag, let marinade atleast half a day
pour enchi sauce on the bottom of pan
Fill tortillas and put in pan
mix left over enchi sauce with cream and leftover marinade
Pour on top of tortillas with cheese
350 degrees for 30 minutes
This is how i did it
I hate flour tortillas so i put tortilla chips on the bottom put the chicken and sauce in the middle and then put chips on the top with the cheese. it was sooo good. Also i didnt do that much chili powder because brad hates spicey and i just eye balled the honey and did two limes, i didnt measure it out. I also added cilantro to the marinade and put some on top with the cheese. And my chicken only sat in the marinade for about 2-4 hours and it was still very flavorful. Is it bedtime yet?
I am just pooped!! Gookie is waking up still in the night. I think she wakes up because she rolls over onto her back (yup, she sleeps on her belly) and then she cant get back on her belly. So last night I woke up 3 times with her! It is just so much easier to feed her and put her back after 5 minutes than to let her cry for 15-20 minutes. Either way I wont be getting sleep. Brad is usually gone to work by the time she wakes up, he has to be at work by 4 am poor man. When she is sleeping in the morning or for nap, Hunter thinks that she needs to be awake because she is. So she will be asleep maybe 20 minutes and then he is in her face "morning gookie!!" and she will just smile at him. SO we put the port a crib in our room and she has been taking naps there. Today Hunter decided not to take a nap so i didnt get a nap and we are just tuckered out!!
However, Gookie is getting on her hands and knees and kerplunking along!! I put her on the floor, went to do the dishes and looked over and she was on her hands and knees, 2 feet from where she had started!!!!!! She will be 5 months on the 22nd.
I experimented with a new recipe tonight for dinner and it was DELISH!! I tweaked it a bit and did i mention it was DELISH?!? And so easy! I am all about easy. It was Honey-Lime enchiladas!! The sweet with the sour, kind of like today! DELISH.
However, Gookie is getting on her hands and knees and kerplunking along!! I put her on the floor, went to do the dishes and looked over and she was on her hands and knees, 2 feet from where she had started!!!!!! She will be 5 months on the 22nd.

*Eastern Idaho State Fair*
The BEST Mullet I have ever seen, also the sickest!!



This year the fair was so much fun because Hunter really enjoyed himself. It was fun for us to see him having fun. He loved the petting zoo, eating and well playing in the dirt. Brad's family has a little spot where they have their trailers for the meat and ice. His uncle supplies ice for a lot of the booths and his dad supplies beef for alot of booths too. So it is nice to have a place where we can sit in the shade and Hunter can run and play away from the crowd. Uncle Randy even took Hunter on the 4 wheeler to go take some ice and Hunter loved that! He came back with a big bag of popcorn that the kettle korn people gave to Hunter for free.






We were able to go to the DEMOLITION DERBY thanks to my brother in law, Darren. He gave us his tickets because he was able to go and be on one of the tow trucks. We took Hunter with us and he loved watching the cars smash into eachother.

Typical day
I love how I dont have to be at class or work or anywhere really by a certain time. So our days are pretty chill. I can get things done around the house and the kids can play inside or outside. So these are some pictures of my kiddos on a typical day. Hunter of course doesnt have pants on but surprisingly has a shirt on. I just love being home with my kiddos and i know that it is a blessing to be able to.
And because one spoon isnt enough
I had made smoothies and Hunter LOVED them. So much that he needed two spoons apparently
